Gluten-Free Tuna Melt

If you're like me, you need to have food ready soon after a workout or you do way too much snacking. This is a quick and easy gluten-free alternative to a tuna melt. Excellent post-workout snack or double it for a post-workout meal! If you're like me, you need to have food ready soon after a workout or you do way too much snacking. This is a quick and easy gluten-free alternative to a tuna melt. Excellent post-workout snack or double it for a post-workout meal!
Number of Servings: 1

Ingredients

    1 Lundbergh brown rice cake
    1 serving plain tuna fish
    1 slice of swiss cheese (can use reduced fat as well)
    Paprika, chili powder, black pepper, or any other seasoning to taste

Directions

Put slice of cheese on rice cake and microwave for 15-20 seconds. Place tuna on top (mush it a little so it stays). Sprinkle with paprika, black pepper, whatever to give it a little zip. Can also put mustard or a little hummus on before tuna.

You can also use tuna salad for this, but for me the appeal is that it takes about zero brain power and cook time to have it ready as is.

  • LOL! My problem is that I can't possibly eat just ONE Lundberg rice cake. One BAG of rice cakes, maybe, but one rice cake? In my dreams. :) - 6/25/11

    hahah so true. I make this with two rice cakes and an entire can of tuna after an intense workout. That much protein is the only thing that can stop me!
