Ingredients

1 Cup All-Purpose Flour
1/2 Cup Whole Wheat Flour
1/4 Cup Flax Seeds
1/4 Cup Chopped Pecans or Walnuts
1/3 Cup Rolled Oats
1/4 Cup Sunflower Seeds
1 T Baking Powder
1 T Brown Sugar
1/2 teasp. salt
1 2/3 Cups Milk
1/3 Cup Vegetable Oil
2 Eggs
Topping:
1 Cup Sliced Fresh Strawberries
1 Cup Blueberries
4 T Lemon Curd
Directions
In large bowl, combine all-purpose flour, whole wheat flour, flax seeds, oats, sunflower seeds, walnuts or pecans, baking powder, brown sugar, & salt. Add milk, oil, & eggs, mix until moistened. Some lumps may remain.
Set preheaated Waffle Baker timer to 3 min & 45 seconds. Spread 1 cup batter into top side of Belgian Waffle Iron. Close top; start timer & rotate waffle iron. Fill second side of waffle iron & rotate back again.
When signal sounds, remove first waffle. Remove second waffle. Repeat with remaining batter. Serve each Waffle with 1/4 Lemon Curd & fresh fruit.
