Mom's Renovated Mac & Cheese

Introduction

Basic macaroni & cheese made with lower-fat or fat-free ingredients and vegetables mixed right in. Healthy, hearty and delicious. This is a go-to meal for getting vegetables into my toddler when he's being fussy. Basic macaroni & cheese made with lower-fat or fat-free ingredients and vegetables mixed right in. Healthy, hearty and delicious. This is a go-to meal for getting vegetables into my toddler when he's being fussy.
Number of Servings: 8

Ingredients

    1 1/2 cups macaroni
    1 Tbsp light margarine
    1 Tbsp all-purpose flour
    1 cup skim milk
    1/4 cup light parmesan, grated
    1/4 cup light cheddar, shredded
    1/4 tsp salt
    1 tsp dijon mustard
    2 cups frozen mixed vegetables

Directions

Cook pasta according to directions.

Microwave vegetables loosely covered in a microwave-safe dish for 4 minutes OR throw your veggies right in with your pasta.

In a small saucepan melt margarine over medium heat, then whisk in flour to make the roux. Cook for 1-2 minutes. Whisk in milk and whisk frequently until sauce becomes thick and bubbly. Reduce heat to low. Whisk in cheeses.

Mix pasta, veggies and cheese sauce together and serve.

Serving Size: makes 7-8 1/2-cup servings or 4 1-cup servings
