9 oz Graham cracker, Keebler Reduced Fat pie crust
8 oz. Neufchatel Cheese, softened (lite cream cheese)
1/3 cup Splenda (or 15 teaspoons)
12 oz. Cool Whip, fat free (24 tablespoons)
16. oz. Strawberries, frozen, unsweetened
Place frozen strawberries in colander, drain for 1 hour, then refrigerate.
Using a mixer, blend Splenda thoroughly with softened Neufchatel Cheese
Add Cool Whip and blend thoroughly
Spoon mixture into Graham cracker pie crust
Cover with aluminum foil, refrigerate overnight
To serve, cut pie into 8 slices and top with strawberries.
*Note: do not put strawberries on the pie until ready to serve, otherwise the crust gets soggy.
