IntroductionHealthy(ish) breakfast or snack muffins that are high in fibre and low in fat.

1 Cup Plain Flour
3/4 Cup OatBran
2.5 tsp Baking Powder
3/4 Tsp Salt
1 TBLspn Oil
1/4 Cup Sugar
1/4 Cup Cocoa Powder/Drinking Chocolate
3/4 Cup Chocolate Soy Milk
50g Chopped Pitted Dates
50g Chocolate Chips
Place all dry ingrediants into a large bowl, sifting the flour and the sugar to ensure there are no lumps
Place wet ingredients in last, and mix thoroughly.
Place the mixture into a 12 case muffin tray, preferably with muffin cases for easy removal.
Bake in the oven for 20 minutes, or until the mini muffins have risen and are soft to touch. Place on a cooling rack for 5 minutes, then either eat immediately or freeze to be heated later on.
