A fun guilt free way to enjoy pancakes....hitting all the points on the food pyramid

Great post workout meal, pre run breakfast, or sunday treat...

Number of Servings: 1

Ingredients

    Quaker 1 min oats 1/2 cup-grind in coffee grinder to make oat flour (or use oat flour!)
    1/2 frozen banana
    1/2 oz chopped pecans
    1/3 cup liquid egg whites
    1 tsp vanilla extract
    1 tsp splenda
    TINY pinch of salt to bring the flavors together.

Directions

**I don't eat bananas fast enough so when they are starting to turn on me, I peal them and break them in half and freeze them. They make for a quick addition to pancakes and smoothies!

1. Throw half a banana in a bowl..microwave 1 min...banana becomes mushy
2. Combine all ingredients with melted banana
3. spray skillet w/ pam and divide mixture into three medium size "pancakes"
4. cook until golden brown on both sides

*Top with sugar free maple syrup
