Quick 'N' Easy Burrito Filling

I love burritos, but cooking for one, I have trouble finishing off all the ingredients before they go bad! This easy recipe will give you a delicious burrito filling that you can freeze and eat at leisure. This easy recipe will give you a delicious burrito filling that you can freeze and eat at leisure.
Number of Servings: 8

Ingredients

    1 can black beans
    1 cup salsa
    1 cup cooked rice
    2-3 cloves garlic
    2 T olive oil
    (1/2 cup onions: optional)

Directions

1. Finely chop garlic and onions. Heat 1 T olive oil in saucepan; toss in onions and garlic. Stir-fry until just tender, about 5 minutes.

2. Drain black beans and rinse under cold water twice. Add to saucepan with remaining olive oil. Stir well.

3. As black beans heat, mash with a spoon to desired consistency (like refried beans).

4. Cook rice; add 1 cup cooked rice to mashed beans. Stir in salsa and simmer 5-10 minutes. Serve warm.

Makes 8 servings of 3-4 heaping Tbsps (about 1/3 cup).
Lasts 5-7 in refrigerator; immediately freeze unneeded servings.

Serve warm in a tortilla or as the base for a taco salad. For a fresh flavor, combine with grilled peppers, freshly squeezed lime juice, cilantro, and avocado (none of these included in nutritional information).
