Parsnip and Ham Soup

Introduction

I got this recipe from a supermarket suggestion leaflet. So easy to make and very very tasty! I got this recipe from a supermarket suggestion leaflet. So easy to make and very very tasty!
Number of Servings: 8

Ingredients

    3 large parsnips diced into cubes
    400g extra lean ham chopped
    2 leeks chopped
    1 stock cube (chicken, beef or vegetable)
    2 tablespoons chopped fresh parsley (optional)
    Black pepper to suit
    Water

Directions

Throw parsnips, leeks and ham into large saucepan. Add 8 cups boiled water. Cook on low heat until all ingredients are soft. Take off heat and blend until soup is smooth. Melt stock cube in 1/2 cup boiled water and then stir through the soup. Also stir through parsley and pepper. Return to heat and simmer on low for another 10-15 minutes. Remove from heat. Can be divided into portions and frozen for future use. Also great cooked with slow cooker!
