Ingredients


    Ingredients:
    Egg, 8 large
    Pork Sausage, 6 link (raw dimensions: 4" long x 7/8
    Baked Potato (baked potatoes), 2.5 potato (2-1/3" x 4-3/4")
    Cheddar Cheese, 4 oz
    Butter, salted, 2 pat (1" sq, 1/3" high)
    Canola Oil, 2 tbsp
    Corn Tortillas (Walmart) 2 per Serving, 9 serving
    Salt, .33 tsp
    Pepper, black, 1 tsp

Directions

Chop potatoes into cubes. Fry in oil until nearly done adding chopped up sausage links. Simmer until sausage nearly cooked and add 8 whipped with a whisk. Simmer turning mixture often until eggs are just cooked through. Serve in warmed tortillas sprinkled with shredded cheddar cheese.
