Summer Vegetable Medley

Introduction

This recipe uses all those quality economical vegetables that are found in summer. It's quick, easy and provides a variety of vegetables in one serving. Number of Servings: 9

Ingredients

    4 cups zucchini sliced
    2 cups broccoli florettes
    1 cup sliced onions
    1 whole red bell pepper - sliced or diced
    12 oz any type mushrooms quartered
    3 T olive oil
    2 T lemon juice
    3 T parmesan cheese- grated
    black pepper
    oregano - dried - to taste
    cilantro -dried - to taste
    or any other fresh or dried spice you prefer
    1 t garlic powder
    sprinkle of salt - about 1/4 T

Directions

heat pan on medium heat, add all olive oil and heat until hot.
add mushrooms and cook 2-3 minutes
add 1 T lemon juice while mushrooms are cooking
add onions and cook additional 2-3 minutes
add pepper, broccoli, and zucchini
spinkle in black pepper, oregano, cilantro, to taste
add 1 t garlic powder and 1/4 T salt
toss well to distribute spices
cook covered until broccoli, peppers and zucchini are brightly colored -about 5 minutes.
remove from heat and sprinkle with 3 T parmesan cheese - I used full fat
raw vegetables measure much higher than cooked so that accounts for the # of cups of uncooked ingredients vs fully cooked. Bon Apetit
