Introduction

Number of Servings: 4

Ingredients

    1 lb peeled shrimp
    3 cups snow peas
    2 cups raw onion chopped
    2 cups mushrooms sliced
    Chef Meg's seafood stock (1 and 2/3 cups)
    1 tsp Red Curry paste
    1 tsp BRAGGS liquid aminos
    1tsp Fish sauce
    1 TBS Corn starch
    1 TBs sugar
    2 cloves garlic chopped

Directions

Saute vegetables til crisp tender, remove; add in thai red curry paste with garlic and saute til heated through; add in shrimp and saute til just under cooked and remove to vegetables. Pour in a cup of stock (have a cooled half cup with a tablespoon of cornstarch mixed into it nearby). When stock is hot spoon in slurry til sauce reaches the thickness you like; some may want more starch to stock. Taste, add in sugar, taste again; adjust as needed. We have to have low sodium. Serve over hot rice; it is pretty spicy!
