Grilled Eggplant Caprese Burgers

Ingredients

    pinch of fine sea salt
    fresh ground black pepper
    1 tbsp olive oil
    2 tbsp balsamic vinegar
    1 small eggplant, cut into 4 rounds/slices about 3/4-1" thick
    12 fresh basil leaves
    1 large tomato (preferably heirloom) cut into 4 slices
    4 1/2-oz. slices part-skim mozzarella cheese

Directions

Sprinkle each side of each eggplant round with a very light sprinkling of salt and pepper and place in a shallow dish. In a small bowl, whisk together the olive oil and balsamic vinegar then use a pastry brush to brush the oil-vinegar mixture over each side of each eggplant round. Pour any remaining oil-vinegar mixture over the top and set the eggplant aside.

Prepare the rest of your ingredients and have nearby to access easily as the eggplant will cook quickly. Heat your grill and coat with nonstick cooking spray. Grill the eggplant for 5 minutes on the first side. (Start toasting your sandwich thins at this point.) Flip and on the side that just grilled (the one with the grill marks!) put 3 basil leaves on each round, top with a slice of tomato and a slice of the mozzarella. Lower the cover on the grill and cook for about 5 minutes until the cheese is melted. Put the "burger" on the bun and enjoy!
