Ingredients

    Ingredients:
    Zucchini, 2 1/2 cups, shredded
    Egg substitute, liquid (Egg Beaters), 1/4 cup
    Olive Oil, 1 tbsp
    Butter, unsalted, 1 tbsp (melted)
    Bread crumbs, dry, grated, plain, 1 cup
    minced onion, 1/4 cup
    *McCormick Old Bay Seasoning, 1 tsp
    *Wheat flour, white, all-purpose, unenriched, 1/4 cup
    *Canola Oil, 1/2 cup

Directions

In a large bowl, combine zucchini, egg, oil, and butter. Stir in bread crumbs, minced onion, and seasoning.

Mix well. Shape into patties and dredge in flour.

In medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.

***NOTE ~ Make sure that you pat the zucchini dry with paper towels BEFORE mixing in other ingredients or they will NOT hold together.
