Quinoa "pudding" (no sug. or art. sweeteners--apple juice)

Introduction

This vegan quinoa dish makes a nice breakfast (some people prefer it without the lemon or with soy milk instead of apple juice). This vegan quinoa dish makes a nice breakfast (some people prefer it without the lemon or with soy milk instead of apple juice).
Number of Servings: 6

Ingredients

    2 cups water
    1 cup quinoa
    2 cups unsweetened apple juice
    1 cup raisins (not packed)
    1 t. cinnamon
    Salt to taste
    2 t. vanilla
    0-2 T. lemon juice (optional, calculated with 1 T.)

Directions

1. Soak quinoa for 15 minutes and drain through a fine mesh sieve (you can skip this step, but I followed it since someone recommended that to me).
2. Place quinoa and water in a pan and bring to a boil. Cover and reduce to a simmer, cooking for 15 minutes.
3. Add apple juice, raisins, salt to taste and cinnamon and continue to simmer covered for 15 more minutes.
4. Remove from heat and add vanilla and lemon to taste.

Serving Size: 6 servings of approximately 2/3 cup
