Introduction

Number of Servings: 3

Ingredients

    1 Med Cucumber
    2 Med Tomatoes
    4 Fresh Basil Leaves
    4 Fresh Spearmint Leaves
    1 Tsp Salt
    1 Tsp Pepper

Directions

Slice cucumber. Add chopped basil and mint. Add 1/2 tsp of salt and 1/2 tsp of pepper. Mix together. Cut tomatoes into 1 inch pieces and add. Add the other 1/2 tsp of salt and 1/2 tsp of pepper. Add 2 tbssp of EVO and 1 tblsp of wine vinegar. Mix together and let stand in refrigerator for a few hours.

Serving Size: Makes 3 1 Cup Servings
