Creamy Garlic Parmesan Penne

Introduction

Number of Servings: 4

Ingredients

    2C whole wheat penne (6oz)

    1 small onion, minced very small
    1t garlic, minced
    2oz Neufchatel cheese (4tbl)
    1/3C unsweetened almond milk
    1/4C shredded parmesan cheese

    1/2 teaspoon black pepper
    1T dried parsley
    1t basil (optional)

Directions

1. Bring a large pot of water to a boil for the pasta. Cook pasta according to package directions.

2. Meanwhile, heat a small saucepan or skillet over medium heat. Spray with olive oil cooking spray. Sautee teh minced onions until they are golden and tender. Add garlic and sautee 2 minutes. If they start to stick or burn, add a splash of water.

3. Stir in neufchatel cheese until melted, then add almond milk slowly until a medium/thick sauce is reached. Stir in parmesan and simmer 1-2 minutes or until melted.

4. Drain pasta when it is done, place in a medium mixing bowl. Pour the cream sauce over the pasta and toss with the herbs and spices.

Serving Size: Makes 4 1C servings
