Hearty Vegetable Beef Soup

Ingredients

    1 pound Beef, round steak, sliced into thin strips
    14.5 oz can Diced Tomatoes
    4 cups canned Beef broth
    1 Red Onions, raw, chopped
    1 red or Idaho Potato, raw, diced
    1 Sweet potato, cubed
    3 stalks Celery, raw, sliced
    1 cup Carrots, raw, sliced
    3 Beef bouillon cubes
    1 tsp Salt,
    1 tsp Garlic powder,
    1/2 tsp black pepper
    14.5 oz can red kidney beans
    14.5 oz can Chickpeas (garbanzo beans)
    10 oz frozen Mixed Vegetables
    1/4 cup Barley, pearled, raw

Directions

I have made this both in a pressure cooker and in a slow cooker.
Pressure cooker: Add all ingredients to pressure cooker. Set to "soup" setting for 50 minutes.
Slow cooker: Combine first 3 ingredients in slow cooker. Cover and cook on high 6 hours; add remaining ingredients; cover and cook on high at least 2 hours more until meat and vegetables are tender.

Serving Size: makes about 18 cups of soup
