Cheesy & "Meaty" Vegetarian Quesadilla

Introduction

Ingredients

    La Tortilla Factory Low Carb High Fiber Whole Wheat Large, 2 Tortillas
    Lightlife Smart Ground Original, 1.5 serving
    Taco Seasoning, 2 tsp
    Weight Watchers Jalapeno Pepper Cheese Wedges, I wedge
    Kraft 2% American Cheese Singles, 1 serving
    Bush's Great Northern Beans, 1/4th of a can
    Salsa, 1 tbsp
    Shredded Lettuce
    Taco Bell Fire Sauce, 2 packets

Directions

In a bowl, combine the beef-style crumbles, beans and taco seasoning and microwave for a few seconds (just until warm).
Spread cheese wedge over one of the tortillas. Spoon "beef" mixture onto tortilla. Tear up the cheese slice and randomly throw over the "beef". Add the fire sauce and cover with shredded lettuce. Spoon the salsa over the lettuce.
Place the other tortilla over the layers and press down. Put the tortilla into a heated skillet and saute for a few minutes until the bottom is golden brown then flip it over and saute on the opposite side until it's crispy as well.
Remove from pan and cut into four slices.

You can serve this with some sour cream if you want. This is really easy to customize so feel free to add anything you want (like cilantro or guacamole).

*You can also choose to mash the beans so it's almost like a refried bean consistency if you want it a little smoother...it also sticks together better this way.
