Broccoli Soup

Introduction

A light creamy soup packed with vegies. Can be made with a vegetable stock or a chicken stock. A light creamy soup packed with vegies. Can be made with a vegetable stock or a chicken stock.
Number of Servings: 3

Ingredients

    300 grams broccoli, roughly chopped
    1 Potato, approx 150 grams, peeled and roughly chopped
    1 Onion diced
    1 cup of 1% Milk
    2 cups of chicken or vegetable Broth,
    Water (add as needed
    2 tsp Olive Oil
    1tsp Butter
    1/2 tsp nutmeg
    Salt and pepper

Directions

1. heat oil and butter to fry onion until translucent
2. Add potato, stock (broth) and milk to a simmer for 10 minutes
3. Add broccoli, cook a further 5-10 minutes.
4. Add nutmeg, salt and pepper to taste
5. puree til smooth and serve

Serving Size: Makes 3 meal sized serves, or 6 entrees
