Introduction

This makes 2 loaves of bread (16 slices per loaf), for a total of 32 slices. Each slice weighs approx 42 grams. My office loves this bread and it is not 'calorie friendly' but I wanted to finally figure out how 'bad' it was. Needless to say, my coworkers were surprised! Ingredients

    2 cups whole wheat flour
    1 stp baking soda
    1/4 teaspoon salt
    1/2 cup butter (one stick)
    3/4 cup packed brown sugar
    2 eggland's best brown organic eggs
    2 1/2 cups mashed bananas
    4 oz Mott's natural applesauce (unseetened)
    1/4 tsp ground nutmeg
    1 tsp ground cinnamon

    Pam cooking spray (I did not count this in the calories)

Directions

1. Preheat over to 350 degrees F. Spray two 9x5 loaf pans with Pam.
2. In a large bowl, combine flour, baking soda & salt.
3. In a separate bowl, cream together butter & brown sugar.

4. Stir in eggs & mashed bananas until well blended.

5. Stir banana mixture into flour mixture; add cinnamon & nutmeg; stir just to moisten.

6. Pour batter into prepared loaf pan.
7. Bake in preheated over for 60-65 minutes, until a toothpick inserted into center of the loaf comes out clean.

Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

(If there aren't enough bananas, use more applesauce to make up the difference - should equal 3 cups).
