Broccoli Cheddar Soup

Ingredients

    4 cups chopped broccoli
    1 celery stalk
    1 small diced onion
    1 tsp minced garlic
    2 tsp butter
    1 tsp chicken bouillon
    3 cups water
    2 cups skim milk
    1/2 cup flour
    1 cup shredded light cheddar cheese
    1 tsp hot sauce
    pepper

Directions

1. Melt butter on medium in large pot. Add diced celery and onion, cook until tender.
2. Add garlic. Cook only 1-2 minutes, do not brown. Add broccoli.
3. Put bouillon in bottom of measuring cup, add hot water. Stir in measuring cup until thoroughly dissolved. Add this to pot, plus another 2 cups of water.
4. Allow to come to boil, then reduce to minimum and cover. Let cook until broccoli has softened (about 25 minutes).
5. Add flour and 1 cup of milk to a sealed container, like good Tupperware or a mason jar. Shake until well mixed, no lumps. Open, add other cup of milk, reseal and shake again.
6. Add small amounts slowly to pot, while mixing, until all is added. Allow to cook on low until thickened, stirring occasionally (about another 10 minutes).
7. Add cheese, hot sauce, and pepper. (Hot sauce, bouillon and cheese means you probably won't need salt.) Great with whole wheat pitas.


Serving Size: About 6 bowl sized servings.
