Sauteed spinach or chard & Mushrooms

Introduction

Great as a side dish. You can also add a little more oil & use as sauce w/ 1 C Pasta to make a quick meal). Great as a side dish. You can also add a little more oil & use as sauce w/ 1 C Pasta to make a quick meal).

Ingredients

    6-8 C fresh Spinach or Chard coarsely chopped
    i/2 C chopped fresh onion
    8-10 sliced white or or wild Mushrooms
    2 cloves chopped garlic
    2-3 Tbsp Olive oil
    1/4 C Italian bread crumbs
    Parmesan Cheese

Directions

Using Wok
1 Saute onion & garlic, mushrooms, in olive oil until soft
2. Add spinach & continue to saute and stir until wilted.(about 2 min)
3. Cover pot and steam cook for 5 minutes
4. Add Bread Crumbs and stir

Serve alone as veg. or combine w/ 8 oz pk of cooked pasta. Add salt & pepper as desired
Sprinkle w/ grated Parmesan cheese (optional)

(note: This will work well using any veg such as Cubed eggplant, zucchini, cherry tomatoes cut in half)
