Ham broccoli & almond frittata

Introduction

Easy Frittata. Make ahead and reheat as needed. Filling and great for last minute breakfasts. Easy Frittata. Make ahead and reheat as needed. Filling and great for last minute breakfasts.
Number of Servings: 8

Ingredients

    8 large eggs
    Salt & Pepper to taste
    10 oz frozen broccoli (unthawed)
    1 1/2 cup diced ham
    1/3 cup sliced almonds
    1 cup 1% cottage cheese
    1 tbs chopped onion

Directions

Bake 350-375 degrees for 1 hour or until "set" in the middle. (Not Wet).
Cool and slice into 8 pie shapes. Refrigerate covered. Microwave to reheat when needed.
Could also add mushrooms & diced tomatoes.

Serving Size: 1/8 slice of a 9" pie plate
