Jill's Mashed Cauliflower

Introduction

Number of Servings: 4

Ingredients

    1 1 Cauliflower, Fresh Whole
    2 - Laughing Cow Light Garlic & Herb Cheese Wedges
    1 Tbls - Reduced Fat or Fat Free Sour Cream
    1 Tbls - Butter with Olive Oil
    1/2 - 1 tsp - minced garlic or garlic powder (to your own taste)


Directions

cut fresh cauliflower into flowerets
steam in microwave or on stovetop al dente
put in food processor or blender
add rest of ingredients
(garlic, minced or powder - to taste)

stir carefully while blending to mash until creamy!

That's it! They are delicious! My son can't tell them from real mashed potatoes!

Serving Size: makes approximately 4 - 2/3 cup servings
