Ingredients

    2 tsp olive oil
    1 lb smoked hot sausage sliced
    1 medium onion diced
    2 lb shrimp (small) or 1 lb chicken
    1 tsp creole seasoning
    2 cloves garlic minced
    2 stalks of celery diced
    1/2 bell pepper diced
    1/2 red pepper diced
    1 serrano pepper diced
    2 cups beef broth
    1/4 tsp whole thyme
    1 1/2 cup of raw rice

Directions

heat oil in a heavy skillet on medium heat. add sausage and cook until brown, stirring occasionally. add onion and brown. add shrimp and creole seasoning. stirring occasionally until shimp turns pink. add garlic, celery, and peppers, broth and thyme and bring to a boil. add rice cover reduce heat to medium low and simmer stirring occasionally. about 30 minutes cook time. it is finished w liquid is absorbs and rice is cooked
