Tasty Turkey Fajitas

Introduction

These are delicious and easy-to-make, and even taste great the next day as leftovers! The recipe is very mild, and will please even pickier palates ... of course, you can always kick up the spice a notch (or two or three!) if you'd like. There is no sugar or starch added, and has lots of protein to keep you full--so it's healthy but also satisfying for guests, kids, the spouse, etc. The salt content can also be lessened if desired. Ingredients

    1 20-oz package lean ground turkey (Jennie O, in this case)
    2 medium-large red bell peppers
    1 large onion

    2 egg whites
    4 teaspoons chili powder OR 2 teaspoon Sriracha (Rooster Sauce)
    2 teaspoons paprika
    2 teaspoons salt
    1+ teaspoon dried minced onion flakes
    1 teaspoon garlic powder
    1 teaspoon cumin
    1/2 teaspoon cayenne pepper
    1 tablespoon extra-virgin olive oil
    2 tablespoons water

    lime wedges (or lime concentrate)

Directions

Slice onion and pepper very thin

Mix together eggs, spices, 1 tablespoon EVOO, and water (or low-fat, low-sodium chicken broth for added flavor!).

Place meat and veggies in a ziploc bag (or divide into 2 if the bags aren't big enough). Pour sauce mix over contents.

Seal the bag and mush around, so the sauce thoroughly covers the veggies and meat. Place in fridge for 15 minutes or longer to marinate.

Heat 1/2 tablespoon of additional EVOO in large pan, then place ingredients to begin cooking.

Cook til veggies are crisp and tender, taking care to make sure meat is thoroughly cooked--at least 6-10 minutes.

Remove from heat, squeeze a fresh lime wedge or two into pan or stir in lime juice (1/4 tsp. if lime concentrate)

Serve with heated tortillas (low-carb to stay calorie-friendly), cheese, sour cream (fat-free is practically guilt free), lime slices, etc.
