Grammy's Broccoli, Chicken, and Rice Soup

This is delicious! I found it in a WeightWatchers Winner's Circle Recipe book. The original recipe called for 1/2 cup rice but I like to use 1 cup to make it thicker. Ingredients

2 teaspoons olive oil;
1 cup chopped onions;
1 cup sliced fresh white mushrooms;
1 garlic clove, minced;
1 tomato, seeded and chopped;
6 cups low-sodium chicken broth;
1 cup long-grain white rice;
2 cups fresh broccoli florets (OR 10-ounce bag/box frozen broccoli);
2 cups cubed cooked skinless chicken breast;
1/4 cup grated Parmesan cheese;
1/2 teaspoon freshly ground pepper.
Directions
1. Heat the oil in a large nonstick saucepan over medium-high heat. Add the onions, mushrooms, and garlic; cook, stirring often, until the vegetables are tender, about 5 minutes. Add the tomato and cook until soft, about 5 minutes.
2. Stir in the broth and rice; bring to a boil. Reduce the heat and simmer, covered, until the rice is tender, about 15 minutes. Stir in the broccoli and the chicken; return to a boil. Reduce the heat and simmer, partially covered, until the broccoli is tender and the chicken is heated through, about 5 minutes. Remove from the heat; stir in the cheese and pepper.
