Ingredients

    2 medium potato
    2 oz canned ham
    1/4 cup egg beaters
    1/4 cup egg beaters southwestern
    1/2 cup shredded cheddar cheese

Directions

Shred potato to make hash browns. Cook in frying pan until done to your liking. Add eggs, ham and cheese on top. Cook through until eggs are set and cooked thru. Cut in2 serving pieces. Add kethcup or any topping if you would like.
