Microwaved Scrambled Eggs

Introduction

A lower calorie way to enjoy a favorite. I love scrambled eggs this way because it is fluffy and slightly moist rather than dry. A lower calorie way to enjoy a favorite. I love scrambled eggs this way because it is fluffy and slightly moist rather than dry.
Number of Servings: 2

Ingredients

    4 large fresh eggs
    1 pat or 1 teaspoon butter, unsalted
    .25 (1/4) cup soy milk
    dash of salt
    dash of black pepper or pepper/lemon combination.

Directions

In a medium microwavable bowl, add soy milk and butter. Heat on high for 1 minute or until butter is melted.
Mix eggs (cracked, of course) into the milk and butter. Add spices and mix thoroughly.

Microwave the ingredients for 1-2 minutes and stir, pushing the eggs that have begun to cook towards the center. Microwave for another 1-2 minutes or until eggs are firmed, but still slightly shiny. Eggs continue to cook so remove the bowl from the oven and serve.

Serving Size: makes 2 servings (two large eggs)
