Roasted Potatoes with Blue Cheese Walnut Butter

Introduction

I got this off of the Flat Belly Diet cookbook but I played with the ingredients a bit. It's also really good with a bit of fresh dill if you have some handy. You can play with the walnuts and blue cheese to get the calories you want. I got this off of the Flat Belly Diet cookbook but I played with the ingredients a bit. Number of Servings: 2

Ingredients

    8 baby red potatoes (approx. 240 grams)
    1 tsp olive oil
    ground back pepper to taste
    few dashes of salt
    0.5 oz. walnuts
    1 oz. blue cheese
    1 green onion

Directions

Preheat oven to 425F.

Toss potatoes with oil, pepper and salt. Place cut side down on a 9 x 9 pan. Roast for 35 min until golden brown.

Toast walnuts in a skillet for approx. 6 min. Let cool. In a small bowl mix blue cheese, green onion and wanuts.

When potatoes are done, toss with cheese mixture and back for another 5 minutes.

Serving Size: Makes 2 servings, 4 potatoes plus sauce each
