Introduction

I went to state 4-H competition with this recipe in 1987. This year (2011) my daughter has converted it to a healthier version and is competing as well. Number of Servings: 24

Ingredients

    3.5 cups all-purpose flour
    1/2 tsp. baking powder
    2 tsp soda
    1 1/2 tsp salt
    1 tsp cinnamon
    2/3 c shortening
    2 2/3 cups sugar
    4 eggs
    2 cans (15 oz) sweet potatoes (drained)
    2/3 cups water

Directions

Sift dry ingredients together. Cream shortening, sugar and add eggs one at a time, beating well. Add sweet potatoes, water and dry ingredients and mix until well blended. Bake at 350 degrees for 55 minutes in a greased and floured loaf pan. Makes 2 loaves.
