Ingredients

1 tsp olive oil
2 large carrots, thinly sliced (or diced)
2 stalks celery, thinly sliced (or diced)
1 large onion, chopped
1 red pepper, thinly sliced
3 cups chicken broth (McCormick all-vegetable bouillon, chicken style with 3 cups water)
1 cup dry red lentils
1 bay leaf
1/4 tsp rosemary
1/4 tsp thyme
1/4 tsp pepper
dash of cayenne pepper
Directions
heat oil in large non stick fry pan. Saute veggies until almost soft.
Add chicken broth, lentils, and seasonings.
Simmer for 30 minutes or until lentils are soft.
Remove bay leaf.
Serve overtop of whole wheat spaghetti or toss into spaghetti and combine well. (spaghetti not included in nutrition calc.)
