The calorie count is high mostly because of the avocado, but this is so delicious it's not even funny! And at least avocados have good fat--I try to use this as an alternative to alfredo sauces. Ingredients

Whole Wheat Spaghetti, cooked, 2 servings (3 oz)
Avocado, 1 fruit without skin and seeds
Olive Oil, 1 tbsp
Neufchatel Cheese, 1 oz
Milk, nonfat, .25 cup
Garlic, 3 cloves, pressed/diced
Yellow Sweet Corn, Canned, 1 cup
Peas, frozen, 0.25 cup
Chicken Breast, no skin, 0.5 breast, bone and skin removed, cut into small pieces
Fresh basil, to taste
Directions
Saute chicken and set aside. Boil water and cook pasta according to directions, usually 6-8 minutes. While that is cooking, in a food processor, combine avocado (no skin or pit), olive oil, garlic, neufchatel, milk (those just help make it more creamy, you probably don't need the neufchatel or milk if you don't want), basil, and some salt and pepper and blend until creamy. When pasta is cooked, drain and return to pot. Add sauce, chicken, corn, and peas (plus some parmesan if you're not too worried about the extra fat/calories!), leave burner on low until all ingredients are warm, then enjoy!
