Leslie's potato salad

Ingredients

    5 lb. Red Potatoes
    1 medium onion diced
    7 hard boiled eggs
    1/2 lg. green pepper diced
    1/2 c. chopped celery
    2 c. Lowfat Hellman's mayo
    Salt and pepper to taste
    Paprika

Directions

Boil potatoes, drain and cool then pell and dice. Peel then add 5 chopped hardboiled eggs reserving 2 eggs for the top or add all of them if you don't want to decorate the top. Add the pepper,onion, celery, and salt and black pepper then add Mayo adding more if necessary. Slice eggs and decorate the top and sprinkle with paprika and chill.
