Brown Rice Pilaf

Introduction

Rice Pilaf with cashews and craisins. This is one of our favorite side dishes, and it heats up well for leftovers. Rice Pilaf with cashews and craisins. This is one of our favorite side dishes, and it heats up well for leftovers.
Number of Servings: 6

Ingredients

    1/2 medium onion
    1/2 bell pepper
    TBL olive oi
    1 cup brown rice
    2 cups low sodium chicken broth
    1/2 cup Cashews (chopped)
    1/2 cup craisins.

Directions

Saute onion and pepper in olive oil until they are soft. Add rice, saute that until it smells nutty. Getting a little canalization on the veg and rice adds a lot to the flavor. Add broth (at this point you may also add seasonings to taste - like thyme or a bay leaf). Cook 45 minutes. Fluff with fork. Stir in Cashews (chopped) and Craisins.
