Smart Carrot Cake Muffins

Introduction

Imagine light fluffy muffins that taste like carrot cake, but without all the fat and sugar. Ingredients

    1 3/4 cup flour
    1 1/4 cup whole wheat flour
    1/2 cup flaxseed meal
    1 cup brown sugar
    1 Tbsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 Tbsp Cinnamon
    3/4 cup egg beaters
    1/2 cup unsweetened applesauce (homemade)
    2/3 cup Smart Balance Light, softened
    1/2 cup skim milk
    1 can (20oz) crushed pineapple with juice
    2 1/2 cups grated raw carrots
    1 cup chopped walnuts

Directions

Preheat oven to 375. Spray 24 medium muffin cups with cooking spray (or use liners)

Combine flours, flax seed, baking powder, baking soda, salt and cinnamon in lg mixing bowl, whisk thoroughly.

In separate bowl combine eggbeater, applesauce, softened margarine, brown sugar, and milk. stir in crushed pineapple.

Add applesauce mixture to dry ingredients, stirring just until combined.

fold in grated carrots. Fold in nuts or raisins(if desired).

Fill muffin cups 3/4 full.

Bake at 375 for 25 minutes or until lightly browned and springy to the touch. (If using convection oven, bake at 350 for 20 minutes.)
