Introduction

This dish is high in potassium and low in salt You can add more or less spices, your choice. Great for brunches, snacks or even for a vegetarian main dish.

To make a "one skillet meal", add precooked meat when you add the canned (or fresh) tomatoes at the end of cooking the veggies. But be sure to add the meat to your nutrition tracker, it is not factored into the recipe counts.

Ingredients

    1 lb brussel sprouts (trimmed, halved and pre-cooked)
    1 lb zucchini (chunked)
    1 lb broccoli (chopped)
    1 medium onion (diced)
    3 small white potatoes (pre-cooked & chunked)
    2 TBSP olive oil
    15 oz can chopped tomatoes, no salt added
    2 TBSP curry powder
    1.5 TBSP worcester sauce
    1 TSP dried basil
    1 TBSP balsamic vinegar (or other vinegar)

Directions

1) Semi cook potatoes and brussels sprouts in microwave.

2) Put olive oil in a large skillet and pre-heat oil over medium heat...add chopped zucchini, broccoli, onions, curry powder, basil, worcester sauce and brussels sprouts...cover pan and saute for 10-20 minutes.

3) Turn up heat to high and add potatoes....saute everything (skillet uncovered) until browned to your liking.

4) Mix in 15 oz can chopped tomatoes and vinegar...Saute for 3-5 minutes...this helps blend the flavors of all the veggies. You can omit the tomatoes if you want to keep the hash crispy.
