Mexican Meatless Casserole

Introduction

What to do with stale tortilla chips, or when you just don't know what to make. It always disappears around here. What to do with stale tortilla chips, or when you just don't know what to make. It always disappears around here.
Number of Servings: 8

Ingredients

    1 TBS olive oil
    1 cup chopped onion
    1 can refried beans
    1 small can diced green chilies
    2 cups diced zucchini
    2 cups frozen corn
    200 grams tortilla chips
    6 oz cheese grated

Directions

Saute chopped onions in olive oil. Add zucchini and corn and cook about 5 minutes. Mix refried beans and green chilies in spearate bowl. Place half crushed tortilla chips in casserole. Add beans and chilies Top with half of the cheese. Then add the corn and zucchini. Add another layer of tortilla chips and top with rest of the cheese. Bake til hot and bubbly, about 45 minutes. Serve with salsa and sour cream as desired.
