Ingredients

    1 tsp olive oil
    1 clove garlic, minced
    0.5 cup onion, chopped
    1 cup red (or preferred colour) pepper
    1 can diced tomatoes (no salt added preferred)
    1 can light tuna in water
    0.25 cup sliced black olives
    0.5 cup frozen spinach
    2 tsp dry oregano
    1 tsp red pepper flakes (more if desired)
    salt and pepper to taste

Directions

heat oil, saute onion, add garlic and pepper when garlic and onion are ready
pour over a can of diced tomatoes when peppers are soft
stir and then add (drained) tuna
add frozen spinach and black olives
season with oregano, red pepper flakes, and salt and pepper
simmer until flavours have melded, maybe 10 minutes
serve over brown rice, couscous, quinoa, pasta, or whatever suits your fancy (not calculated in this recipe)
