    1 LB GROUND LEAN BEEF 93%
    1 ONION CHOPPED
    1 CUP WHOLE MILK RICOTTA
    1 EGG WHITE
    1 CUP PART SKIM MOZZARELLA SHREDDED
    2 T PECORINO
    1.5 CUPS CRUSHED TOMATOES
    1 EGGPLANT SLICED IN 1/4" CIRCLES
    GARLIC POWDER
    SALT
    PEPPER
    DRIED BASIL
    DRIED PARSLEY

Directions

PLACE EGGPLANT SLICES SPRAYED WITH PAM AND SEASONED WITH GARLIC POWDER, SALT AND PEPPER AND BAKE AT 400 DEGREES FOR ABOUT 40 MINUTES TURNING HALFWAY.
WHILE BAKING SAUTE CHOPPED ONION AND GROUND BEEF TILL BEEF IS NO LONGER PINK; ADD CRUSHED TOMATOES, SALT, PEPPER, BASIL; BRING TO BOIL; SIMMER COVERED.
MIX TOGETHER RICOTTA; EGG WHITE; SALT; PEPPER; PARSLEY.
IN A 9" SQUARE PAN PLACE A THIN LAYER OF THE COOKED GROUND BEEF SAUCE; THEN LAYER ALL THE EGGPLANT ROUNDS; SPREAD THE RICOTTA MIXTURE EVENLY; SPRINKLE HALF THE MOZZARELLA; ADD THE REST OF THE GROUND BEEF (USING A SLOTTED SPOON); SPRINKLE WITH REMAINING MOZZARELLA AND SPRINKLE WITH 2 T PECORINO GRATED CHEESE.
BAKE UNCOVERED FOR ABOUT 40 MINUTES.
