Rock Cornish Hens with Rice Stuffing

Ingredients

1.5 T. Smart Balance Light Buttery Spread
1/6 c. shredded carrot
1/6 c. chopped red or green bell pepper
1 T. chopped onion
! c. cooked brown long-grain rice
1/8 c. slivered almonds
1 T. brown mustard
1/2 T. chopped fresh parsleyi
1 lb. Rock Cornish hen, rinced & patted dry
1/16 tsp. paprika
Directions
Preheat oven to 400F. Melt spread in medium skillet over med-high heat. Add carrots, bell peppers and onions. Add rice, almonds, mustand and parsley, stir.
Spoon rice mixture into cavity of hen; secure with wooden picks. Sprinkle hen with paprika. Place, breat-side up, on rack in shllow roasting pan.
Bake one hour or until meat thermometer reaches 165F when inserted in the center of stuffing. Let hen stand 10 minutes before removing stuffing. Remove and discard wooden picks. Cut hen in half to serve.
One hen serves two.
