Ingredients

    .5 tbsp olive oil
    1 c red onion, finely chopped
    1 c mango, peeled and cubed
    .5 c tomato, chopped
    1.5 tbsp fresh ginger, minced
    .25 c fresh lime juice
    2 tbsp orange juice
    2 tbsp dry sherry
    1.5 tbsp brown sugar
    1.5 tbsp white vinegar

Directions

Stir together all ingredients in a nonreactive bowl. Store covered in refrigerator until ready to serve.
