Introduction

This is a tasty salad that is refreshing for the summer. Can also be great for a light lunch salad or a side at a bbq. The tangy of the ginger and lemon really brings out the sweetness of the melon. Number of Servings: 4

Ingredients

    1 Tbsp minced ginger
    3 green onions, chopped to the top
    2 Tbsp extra virgin olive oil
    1 Tbsp apple cider vinegar
    1 lemon, juiced
    1 Tbsp honey
    1 tsp sea salt
    1 bag just lettuce salad mix
    1/4 cantaloupe, peeled deseeded and cubed
    1/4 honeydew melon, peeled, deseeded and cubed
    1/2 cup roughly chopped fresh cilantro
    Pinch of sea salt
    Fresh black pepper to taste

Directions

In a salad bowl, mix ginger and onions with olive oil, vinegar, lemon juice, honey and sea salt. Allow to stand for 5 minutes or longer to develop flavor. Toss in the lettuce and melon and toss to coat. Sprinkle on the cilantro and season with salt and pepper to taste.
