Introduction

Use the recipe version rather than the weights (that was just doing my best for the calculator limitations)

Number of Servings: 10

Ingredients

    2 Cans black beans rinsed and drained
    1 can whole kernel corn, drained (can use frozen)
    16 oz. medium salsa
    1 can diced tomatoes, drained
    1 can Rotel Mexican tomatoes and chilies
    1 bunch thiny sliced green onions
    2 T. olive oil
    1 T. minced garlic
    1 t. cumin
    1 small bunch fresh cilantro (never dried), washed, trimmed, and chopped
    1 C. cheddar cheese shredded
    (Is also delicious without the cheese, which reduces calorie count)

Directions

Mix all ingredients except cheese. Chill several hours. Add cheese before serving.
Serve with chips of your choice.
Is also delicious served without chips as a salad or as a relish/accompaniment to sliced meats.

Serving Size: 1/2 C.
