2 Cans black beans rinsed and drained
1 can whole kernel corn, drained (can use frozen)
16 oz. medium salsa
1 can diced tomatoes, drained
1 can Rotel Mexican tomatoes and chilies
1 bunch thiny sliced green onions
2 T. olive oil
1 T. minced garlic
1 t. cumin
1 small bunch fresh cilantro (never dried), washed, trimmed, and chopped
1 C. cheddar cheese shredded
(Is also delicious without the cheese, which reduces calorie count)
Serve with chips of your choice.
Is also delicious served without chips as a salad or as a relish/accompaniment to sliced meats.
