Couscous Salad

Introduction

Great as a summer side or to take on a picnic :) Great as a summer side or to take on a picnic :)
Number of Servings: 6

Ingredients

    Whole Wheat Couscous
    Chicken stock/bovril
    Garlic
    Cucumber
    radishes
    red onion
    extra virgin olive oil
    balsamic vinegar
    red wine vinegar
    creamy dijon mustard
    salt and pepper to taste

Directions

Boil 1 1/2 cups of stock (water with bovril)
pour in couscous, cover and take off the heat: leave for 5-10 minutes
meanwhile dice into small peices cucumber, onion, and rasishes- set aside
To make dressing- mix together: Mustard, Balsamic, Red wine vinegar, minced garlic, Olive oil, salt, and pepper to taste.
When couscous is cooked, fluff with a fork and cool in the fridge
When cooled add the diced vegetables, mix well
Add dressing with couscous and vegetables and set in fridge
Can be eaten right away or left in fridge for up to 3-4 days

Serving Size: makes 6 1 cup servings
