Chicken Capri Low Carb

Number of Servings: 4

Ingredients

    1 cup full fat ricotta cheese
    1/2 tsp dried oregano
    1/4 tsp salt
    1/4 tsp black pepper
    4 chicken breasts
    1.2 tsp garlic powder
    2 tblsp olive oil
    1 cup crushed tomatos
    1 cup full fat mozza cheese grated

Directions

In a blender, combine the ricotta with spices. Rub the chicken with garlic powder. Heat oil in a skillet and brown the chicken (both sides) for ~12 minutes. Preheat oven to 350F. Put the chicken breasts into a baking dish. Spoon the cheese mix over the chicken and then the tomatoes over the cheese. Sprinkle Mozza over everything!
Bake for 20 minutes or until chicken is 170 (internal temp).

  • Wonderful!!! I used part skim ricotta and provolone cheese slices. Also I pounded the chicken beast to make them thinner. The portion size is huge and can easily be used to serve six. Reheats well. - 4/7/08
