Ingredients

    Fresh Collards, 7 cups washed, uncooked, stemmed, chopped
    Olive Oil, .25 cup
    Minced garlic, 1 or 2 rounded tablespoons
    Organic vegetable broth, 1 cup
    Salt, 1 teaspoon
    Great Northern Beans, 2 cans, drained
    Almonds, .25 cup, sliced
    (onion powder & pepper optional)

Directions

in a deep cooking pan, heat olive oil on low and add minced garlic until fragrant (about 1 minute); add in chopped and stemmed collard greens, 1 cup vegetable broth, and place on medium to low heat with lid.
Check every 15 minutes, stirring and turning greens.
After 90 minutes, greens should be very tender.
Remove pot from heat, and let it cool for a few minutes.
Add two cans of great northern beans (drained) and .25 cup of almonds on top.

Serving Size: Makes 5 servings for a main meal, or many servings of a side dish!
