Potato Soup

Introduction

This is my mother's potato soup. It is a comfort food, not high on healthy eating. This is my mother's potato soup. It is a comfort food, not high on healthy eating.
Number of Servings: 8

Ingredients

    6 medium white potatoes
    1 tsp of chicken flavored bullion powder
    2 boneless, skinless chicken breast
    16 oz. of chicken broth
    1 cup of Reserve broth from chicken
    1 tbsp of thyme
    2 tbsp of black pepper
    1 tbsp of salt
    1 can of Campbells Chicken Mushroom soup
    1 cup of white flour
    2 cups of 2% milk

Directions

Boil chicken breast until juices run clear (about 20 minutes)
Pare and cube potatoes
Cut chicken breast into cubes (save chicken broth)
Combine chicken and potatoes in large pot.
Add the strained broth from the chicken)
Add the chicken broth.
Add spices.
Stir in soup and flour. Careful that flour doesn stick to bottom.
Add milk.
Let simmer stirring occassionally for about 30 minutes or until potatoes have softened.

Serving Size: Makes 8 1-cup servings
