Introduction

First try. Need to add onion, garlic to boost flavor and maybe some scrambled egg whites. Kids said they were ok and that should make again with changes. A little bit of real maple syrup on top made the difference. Goal was to create a healthy breakfast bite that can be frozen and popped into microwave for those on the run mornings. First try. Ingredients

    1 1/2 c. all-purpose flour
    c. whole wheat flour
    tsp. salt
    2 tsp. baking powder
    2 tsp. brown sugar
    1 large egg
    2 tbl. flaxseed mixed with 6 tbl. water
    1 c. skim milk
    c. unsweetend applesauce
    1 c. vege substitute for ground meat
    c.shredded cheddar cheese
    sausage flavoring, onions, garlic, scrambled egg whites?

Directions

Preheat oven to 400.

In a large bowl, combine the dry ingredients for the batter.
In a separate bowl, mix the eggs, milk, and butter.
Make a well in the dry ingredients bowl. Dump the liquid ingredients into the dry well and mix until all ingredients are moist.

Pour 1 tbl. of batter into each muffin cup, just enough to cover the bottom of the cup. For each cup, add in 2 tsp. meat crumples and cover with 2 tbl. of batter. Leave enough room in each cup to add a layer of shredded cheese, 1 tsp..
Bake the muffins at 400 degrees for 25 minutes.
