Fall Vege Quiche

Number of Servings: 6

Ingredients

    4 eggs (or beaters) slightly beaten
    2 c. plain lofat yogurt
    1/4 tsp. pepper and salt
    1 tsp curry powder
    1 small zucchini, 1 sm. summer squash, chopped
    1 c. each cheddar and mont jack cheese
    1 tbsp flour (whole wheat works fine)
    1 unbaked 9-inch pie crust


Directions

Preheat oven to 375 degrees. Mix egges,yogurt,pepper, salt and curry. Beat well, Add veges and stir. Place cheeses and flour in sealed bag and shake. Add to mixture and stir. Place crust in pie pan and bake for 3-5 minutes until brown and bubbly. Pour yogurt mixture into crust and bake 40-45 minutes. Cover crust w/foil if it burns. Let cool 10 minutes.
